Our Story
From a Single Sydney Café to a Specialty Coffee Roastery
The Dipacci story began in the bustling Sydney suburb of Marrickville — not in a roastery, but at a single coffee cart set up outside a local bank in 2003. That cart belonged to Michael "Mik Di Pacci" Rababi, who started with one simple idea: he didn't want a boss. What followed was more than two decades of relentless work that grew that one cart into several cafés, and eventually into one of Australia's largest coffee companies.
As the cafés multiplied, our focus gradually shifted from the cafés themselves to the things that make great coffee possible: the machines, the grinders, and above all, the coffee.
Dipacci Coffee Company
Founded as Dipacci Coffee Company in 2010, the business brought all of that café-floor experience under one roof — coffee machine sales, barista training, machine servicing, rentals, and coffee roasting as a complete, end-to-end operation. We remained in Marrickville for many years before relocating to a purpose-built, state-of-the-art headquarters in Roselands, Sydney.
Today, Dipacci Coffee Company is Australia's largest supplier of coffee machines, with a team of over 20 specialists helping cafés, restaurants, offices, and home baristas get the very best from every brew.
The Dipacci Espresso Label — Launched 2018
By 2018, we'd spent years immersed in every corner of coffee — running cafés, servicing thousands of machines, training baristas, and roasting daily. That whole-of-industry experience taught us exactly what separates good coffee from great coffee: consistency, clean green beans, and a roast profile dialled in with precision. In 2018, all of it was distilled into a single label — Dipacci Espresso.
Dipacci Espresso wasn't a rebrand. It was a statement of intent. After years of supplying the equipment behind Australia's cafés, we wanted to put our own name on the one thing that matters most in the cup: the coffee itself. Every bag bearing the Dipacci Espresso label represents the very best our roastery can produce — nothing we wouldn't proudly serve across our own counter.
The promise is simple. No filler, no shortcuts. Just carefully selected beans from renowned growing regions, roasted with the precision that only a fully automated Brambati roaster can deliver, and sealed fresh from our Roselands roastery.
Four Signature Blends
At the heart of the label are four signature blends, each built for a different cup and a different mood. Together they span the roast spectrum, so there's a Dipacci Espresso for every palate and every drink:
- After Dark — our boldest blend. A powerful dark roast with rich chocolate and smoky undertones that cuts cleanly through milk. Made for espresso lovers who want an intense, full-bodied cup.
- Elements — a balanced, versatile medium roast with caramel sweetness and a silky body. The everyday go-to for flat whites, lattes, and milk-based drinks.
- Sydney Road — a rich medium-dark blend with dark cherry and cocoa notes. Sweet, aromatic, and perfectly balanced, with a long, fine finish that pairs with any milk.
- By The Bay — our brightest, lighter roast, with floral aromas and a clean, lively character. Exceptional as morning espresso, pour over, or cold brew.
Alongside the core range, we release a rotating line of single origins — beans from a specific farm or region, like Panama, Guatemala, and Colombia, that let the character of soil, altitude, and processing shine through in every cup. Roasted to Order, Shipped Fresh
Unlike beans that sit on a shelf for months, Dipacci Espresso is roasted to order. We roast fresh every weekday, then seal and dispatch quickly so your coffee arrives at its peak. Coffee is at its best in the weeks after roasting — and roasting to order is how we make sure every bag lands that way, whether it's heading to a home kitchen in Sydney or a café overseas.
Our Roselands Roastery
Our purpose-built Roselands roastery is engineered for consistency at every step. A fully automated Brambati roaster locks in precise roasting profiles so each blend tastes identical batch after batch. Our triple green bean cleaning process — one of Australia's first — uses magnets and three-phase filtration to remove metal, rocks, and timber that most roasters never address, delivering a purer, safer cup and protecting your grinder.
Our 12-compartment green bean silo holds 1,800 kg per compartment, enabling stable, efficient stock and reduced shipping emissions. Over 300 solar panels generate more than 132,000 kWh of clean energy a year, powering roughly 70% of the roastery and helping keep our footprint low.
